fermented peppers – 2nd batch

This is my second batch of fermented hot peppers. This batch uses fresh (not roasted) peppers, but is otherwise unchanged. And yes, that’s a wish bone peeking out from under the plate (it’s being used as a shim to level the ferment bowl).

This is my second batch of fermented hot peppers (mainly jalapenos, and mostly green jalapenos at that). I didn’t roast this batch – I just cut them in half and removed the seeds and veins. It’s been much colder than when I fermented the previous batch, so it’s taking a little longer for this one to start fermenting. I’m keeping a careful watch on it this time around!
